Today marks National Park Service Founders Day—a tribute to the stewards of our wildest wonders. This day honors the Park Service and its tireless efforts in conservation and preservation. Whether you’re hiking alpine trails, boating through mangrove forests, or simply soaking in the silence of a desert sunrise, remember: it’s the dedication of Park Service employees that makes these experiences possible. They are the quiet heroes behind every trail marker, ranger talk, and protected vista.

There are 63 designated National Parks, but the full scope of the National Park System is even more breathtaking. With 433 unique units—including monuments, historic sites, lakeshores, and seashores—it spans over 85 million acres across all 50 states and U.S. territories. Listing them all would take a lifetime… and maybe that’s the point.

🌄Future Footprints: My Park Bucket List

If I get the chance to travel again, Utah is calling. With its “Mighty Five”—Arches, Bryce Canyon, Canyonlands, Capitol Reef, and Zion—it’s a dream itinerary of red rock cathedrals and star-studded skies. I’d love to do a trip that takes them all in, one canyon curve at a time.

National Waffle Day

National Waffle Day: Let’s Talk Syrup, Grids, and Golden Crispy Joy

I kid you not—this is the very first item on today’s list of National Days and Observances. Numero uno. Right there, top of the stack: National Waffle Day.

Why? Because on this day, the first U.S. patent for a waffle iron was issued. And honestly, that’s reason enough to celebrate. Waffles are more than breakfast—they’re edible architecture. Crispy on the outside, fluffy on the inside, and perfectly designed to cradle syrup, berries, whipped cream, or whatever your heart desires.

Now, let’s take a quick peek at the other contenders:

  • National Peach Pie Day: Tempting, but we already gave peaches their moment this week.
  • National Maryland Day: A nod to the 7th state to join the Union. Respect, but not breakfast.
  • Pluto Demoted Day: Poor Pluto. Still spinning out there, doing its thing, even if it’s no longer a planet. I doubt it cares.
  • Feast of Saint Bartholomew: A solemn observance, not quite waffle-adjacent.
  • International Strange Music Day: Intriguing, but I’m not sure what qualifies as “strange.” Kazoo symphonies?
  • National Knife Day: Sounds like the setup for a murder mystery. Hard pass.
  • Kobe Bryant Day: A heartfelt tribute to a legend. Beautiful, but heavy.

So, back to waffles. One of my favorite breakfast foods—hands down. Whether you like them Belgian-style, buttermilk, or sweet potato-infused, today’s the day to fire up the iron and celebrate those golden grids. Bonus points if you drizzle maple syrup in slow motion like it’s a food commercial.

Waffles deserve their spotlight. And today, they’ve got it.

  • Preheat your waffle iron, spray with non stick cooking spray and set aside.
  • In a large bowl whisk together the flour, baking powder, sugar, salt, and cinnamon.
  • In a medium bowl beat the egg whites with a hand mixer until stiff peaks form. Set aside.
  • In a separate medium bowl mix together the egg yolks, vegetable oil, milk, and vanilla extract.
  • Add the egg yolk mixture to the dry ingredients and mix well.
  • Fold in the egg whites.
  • Pour the batter onto your hot waffle iron and cook according to manufacturer’s directions**
  • Serve immediately with butter, syrup, powdered sugar or any other favorite toppings.

These buttermilk waffles are crisp on the outside and tender in the middle. I love the results this gives while not having to separate the eggs and take time to whip egg whites! These will also reheat in the toaster for a quick workday breakfast.

  • 2 tablespoons white sugar

  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract

Directions

  1. Gather all ingredients.

  2. Whisk flour, sugar, baking powder, baking soda, and salt together in a bowl until evenly combined.

  3. Whisk buttermilk and melted butter together in a separate bowl; whisk in eggs.

  4. Stir buttermilk mixture into flour mixture until just combined and batter is slightly lumpy; stir in vanilla extract.

  5. Preheat a waffle iron according to manufacturer’s instructions.

  6. To cook each waffle, pour enough batter into the preheated waffle iron to reach 1/2 inch from the edge. Cook according to manufacturer’s instructions.

  • Remembrance for the Victims of Stalinism and Nazism
  • Slavery Reembrace Day

And then there was poor William Wallace, executed in 1305 in a way so brutal it makes medieval horror look tame: hung (but cut down alive), emasculated, eviscerated, and finally drawn and quartered. Yikes. I think I need a new calendar.

It’s not that we shouldn’t honor these moments—they matter deeply. But here at Around Dusty Roads, I like to keep things light, curious, and a little whimsical. So when I stumbled across a more cheerful observance, I knew I’d found my muse: Find Your Inner Nerd Day!

Food is always a welcome topic—after all, who doesn’t love to eat? Right now, my local grocery store is bursting with golden displays of fresh peaches, practically glowing under the summer lights. So I thought: why not celebrate this sweet, sun-kissed fruit?

😬 Peach Fuzz

Fresh peaches aren’t my favorite—not because they lack flavor (they’re absolutely delicious), but because of the fuzz. Yes, peach fuzz is real, and it makes my teeth squeak. Or at least, I think it does. I just can’t stand the texture. If I’m willing to peel them, I enjoy them just fine. I also like canned peaches, though they’re often swimming in heavy syrup, which isn’t ideal.

Peaches grow in many states, including California and Pennsylvania, but in the U.S., they’re most famously associated with the South. Georgia even features a peach on its license plate—because who hasn’t heard of the iconic Georgia Peach?

Here are a few peachy recipes that bring out the best in this summer fruit:

  1. Peach Crumble – A cozy blend of cinnamon and brown sugar adds warm, molasses-like depth.

There are countless Cobbler recipes out there; but I chose  Allrecipe’s Southern Peach Cobbler for that authentic Southern touch. . Let me know what you think!

Ingredients

Original recipe yields 4 servings

  • fresh peaches – peeled, pitted and sliced into thin wedges
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • ¼ teaspoon ground cinnamon
  •  teaspoon ground nutmeg
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour
  • ¼ cup white sugar
  • ¼ cup brown sugar
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 6 tablespoons unsalted butter, chilled and cut into small pieces
  • ¼ cup boiling water
  • 3 tablespoons white sugar
  • 1 teaspoon ground cinnamon

Directions

Step 1

      Gather all ingredients.

Step 2

      Preheat the oven to 425 degrees F (220 degrees C).

Step 3

Combine peaches, 1/4 cup white sugar, 1/4 cup brown sugar, 1/4 teaspoon cinnamon, nutmeg, lemon juice, and cornstarch in a large bowl; toss to coat evenly, and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes.

Step 4

Meanwhile, combine flour, 1/4 cup white sugar, 1/4 cup brown sugar, baking powder, and salt in a large bowl. Blend in butter with your fingertips or a pastry blender until mixture resembles coarse crumbs. Stir in water until just combined.

Step 5 

Remove peaches from oven, and drop spoonfuls of topping over them.

Step 6

Mix 3 tablespoons white sugar and 1 teaspoon cinnamon together in a small bowl; sprinkle over entire cobbler.

Step 7

Bake in the preheated oven until topping is golden, about 30 minutes.

Step 8

Let cool for 30 minutes then service with a scoop of Vanilla Ice Cream.

  • Onion: An onion, cooked in bacon grease, lends even more complexity and flavor.
  • Vinegar: White vinegar adds tanginess that cuts through the richness from the potatoes and bacon.
